1 Suday Gravy sauce
1 pound meaty pork neck bones
1 pound veal stew meat
1 pound plain pork sausages
garlic
olive oil
1/4 cup tomato paste
3 cans of peeled tomatoes
2 cups water
salt
pepper
basil leaves
Heat tablespoon of olive oil in a large heavy pot, put pieces of pork in the pot. Cook for 15 minutes than transfer to the plate. Repeat with the veal and the sausages>
Add garlic to the pot and cook until golden then remove from the pot. Stir in tomato paste and cook for a minute, add pureed tomatoes, water and salt/pepper to taste.
Add pork veal, sausages and basil and bring the sauce to a simmer.
Partially cover the pot and cook over low heat stirring for 2 hours
2 Ziti al Forno or Baked Ziti with Meatballs
1 pound ziti
Sunday gravy from the previous recipe
Meatballs
1 cup Pecorino Romano gratede
1 cup ricotta
8 ounces of mozzarella
salt
Boil water in a large pot, add the ziti and salt to taste. Cook the ziti al dente (tender yet firm).
Drain the ziti and put it in a large bowl, toss it with 3 cups of the gravy and half of the grated cheese, stir in the meatballs.
Preheat the oven to 350F.
Spoon half of the ziti into a shallow baking dish, spread the ricotta, sprinkle with the mozzarella and half of the remaining grated cheese. Pour on 1 cup of the sauce. Repeat with the second half ziti and sauce.
Sprinkle with the remaining grated cheese.
Cover in foil and bake for 45 minutes, then uncover and bake for 20 more minutes to get the crust.
Your dish is ready!
3. Marinara sauce
2 large garlic cloves smashed
1/4 cup olive oil
2 pounds plum tomatoes peeled and chopped
10 basil leaves torn into pieces
In a large pot cook garlic until golden in olive oil over medium heat then add tomatoes and salt to taste.
Bring to a simmer and cook until the sauce is thick, it may take 10-15 minutes. Stir in the basil leaves.
Serve over cooked spaghetti with grated Pecorino Romano
